My kids’ favorite tuna recipe

My kids are choosy when it comes to fish and seafood dishes. But serve them anything with Tuna in it is a sure smash hit. I remember when I prepare my own version of Tuna Fish Fillet and potato chips. The menu has been on top of my cooking list for weeks. They request for the same dish every other day.

My healthy tuna fish fillet is easy to prepare. I soaked the fillet of fish (about a kilo of Yellow Fin Tuna already sliced) in a bowl of soda (Sprite). Then dredge the fish in a separate bowl of all-purpose flour. Put in a dash of salt, pepper and seasoning. Then pan-fry the fillet in hot-cooking oil until its golden brown. Add in a few slices of fried potato for side dish. The whole preparation and cooking time takes me less than an hour.

For dressing, I prepare a mixture of mayonnaise and ketchup to enhance the taste of fish. My kids love the simple presentation and gave me two thumbs up as approval.

Aside from fish fillet, my kids also love flaked tuna for sandwich filling. It’s their favourite snack during break time and after school.

Ever wonder why my kids love tuna dishes? Well, they got it from their Dad’s side of the family. My husband was born and raised in General Santos City, the Tuna Capital of the Philippines. All of my husband’s siblings and their respective families know how to prepare tuna dishes. No wonder most of our nieces and nephews there are achievers in school like my own kids.

When I was pregnant,, my mother who was then staying with us, would always prepare Milkfish or shrimp in tamarind soup base. My OB-Gyne was telling me that fish is a rich source of amino acid that’s why they call it the brain and heart food.

In fact, a study conducted by the Danish National Birth Cohort between 1997 and 2002 in over 25, 000 Danish mothers and their child supported the safety of seafood intake to both pregnant and lactating mothers.

The result of the study was published by the American Journal of Clinical Nutrition showing that kids whose mothers ate significant servings of fish have better early child development compared to kids whose mothers have lesser fish intake all throughout their pregnancy. A scientific study that was just released show that women who stay away from eating fish while they are pregnant are at risk of depression.

Thank God I never experienced any spell of depression after I gave birth to my kids. I’m glad that fish is an important part of our diet.

Back to school, back to work

Millions of students are officially back to school today. It’s the first regular day of school for the new year. Employees, who enjoyed the week-long vacation, are also back to work today. I think some opt to extend their vacation for a few days. 🙂
