Simple Birthday Celebration for the Man of the House

Hubby just celebrated his birthday a few days ago. We had spaghetti, pizza, calamari, and mojos for lunch and dinner courtesy of our daughter. Thanks, N.

Everyone is busy so we were not able to take pictures of the food except this Ube Bloom Cake from Red Ribbon Bakeshop. We prefer this cake variant from the other ones that we tried before because the icing is not too thick and the sweetness is just right for us.

Simple Graham Mango Float

I think someone will replace this momma in the kitchen. My daughter is beginning to take an interest in prepping some dessert for the foodie family.

She was able to do this graham cake twice. Too bad, this is the only good photo that we have.

Ingredients:

Two packs of graham crackers
1/2 can condensed milk
2 packs All-purpose cream
3 ripe mangoes

Procedure:

Mix the condensed milk and all-purpose cream in a bowl.
Place a layer of graham cracker in a plastic or glass container.
Add a generous amount of condensed milk and cream mixture on top of the graham crackers.
Add sliced mangoes
Place another layer until you achieve the desired height or layer.

Best served chilled.

Tikoy for Chinese New Year

I know this post is way too late for publishing but will post it anyway. We don’t celebrate Chinese New Year like most people (non-Chinese) do. But we see to it to buy Tikoy or CNY cake to feast on even if the occasion is over. We bought it for only 100 pesos at Fairview Center Mall.

Cooking Tikoy is easy. Sliced the cake thinly and dip in egg before frying. Fry for a few minutes until golden brown. Best served with coffee or you favorite beverage.
